The loin roast weighs
between 3.5 and 5.5 pounds and is comprised of two distinct cuts: the strip and tenderloin. Each roast contains 4 strips and 4 tenderloins which, like beef portions of the same name, are the most tender, delicately-marbled and celebrated cuts available. By roasting, you are sure to bring an elegant flavor and note of luxury to any meal. For a more advanced cooking technique, the roast can be separated to sauté each piece individually.
